For those of us who partake, home-brewing kombucha renews a sense of intimacy with biological oddities. Among the healthy benefits of this tea, we welcome a totally alien entity called the scobi into our homes. The scobi, a gelatinous layer-cake of floating micro-organisms which ferments our tea greets us with funky smells, gooey textures, and sour beverage until we’ve fully normalized its bizarreness. Once familiar with this new friend, it is with equal parts fear and joy that we are tasked with reaching into the kombucha jar and lifting the scobi with bare hands in the process of managing the batch. In such encounters with the weirdest gifts of the natural world, we become….the Scobi Diver.
